Spaghetti & meatballs

On paleo we try to cut down on the red meat we eat, so we usually make our spaghetti and meatballs with ground turkey for the meatballs. We use spaghetti squash in the winter as the noodles, but when it gets hot, we “spiralize” zuchinni or other squashes for the noodles.

This recipe serves four.

4 minced garlic cloves

3 tsp olive oil

1/4 tsp basil

1/4 tsp oregano

1/2 tsp salt

1/4 cup wine

32 oz Cadia tomato sauce

In  large pan, saute garlic in the olive oil until it’s tender, then add the salt. Add sauce, basil, and oregano. Simmer for 20 minutes, add the wine, the simmer another 10 minutes. Serve over the “pasta” of your choice!
